Keeping fridges at 5 degrees centigrade and freezers at -18 degrees centigrade or below is essential too, a hanging freezer thermometer can help you ensure you achieve this – and making sure you cook your food straight from the fridge, not from the side. The food you are reheating needs to be piping hot and a temperature probe is a handy tool to check it is cooked to the right temperature. It usually should be over 70 degrees centigrade for at least two minutes. Just wipe the temperature probe with a probe wipe before you check the temperature of another food group so as not to cross contaminate.

As more and more restaurants turn to offer takeaways throughout the pandemic, it has become extra important to ensure that allergen information is accurately displayed and communicated. With little or no physical interaction between the customer and the person taking the order, large and vibrant allergen labels clearly marking the containers, need to ensure that those consumers with allergies are aware of the ingredients within so as not to cause a potentially life threatening allergic reaction.
